  • 30 ml of soy sauce
  • 45 ml of cooking vinegar
  • 30 ml of Mirin
  • 1 spring onion, sliced
  • 2 teeth of garlic, finely cut

Prepare the marinade:

  • In a small bowl, mix 30 ml of soy sauce, 45 ml of cooking vinegar and 30 ml of mirin.
  • Transfer the mixture to a pot and keep on low fire for a few minutes.
  • Add 1 roasted onion and 2 garlic teeth and let it cool.

Melt 300g of beef filet with salt and pepper and let it rest for 10 minutes at room temperature.

In a medium pan, heat a little salmon oil at medium heat and seal the meat for about 1 minute on each side, leaving the inside still badly passed.

Remove the meat from the pan and let it rest for 5 minutes on a cutting table.

Cut the filet into thin slices and put it on a long plate, pour the marinade sauce over the meat and serve with a small bowl of Ponzu soy sauce.

If you prefer, you can cover and let the meat rest in the refrigerator to serve it cold, with a larger infusion of the marinade.

  • An alternative to marinating the meat is to put it in a plastic bag along with the marinade (after sealing and before cutting) and leave it in the refrigerator for 2 hours.
