- The green layer:
- Rice flour 50g
- 40 g of sugar
- 75 ml of water
- 1-3 tablespoons of matcha powder, to taste
- The white layer:

Preparation:
Start by preparing the green layer:
- In a bowl, mix 50g of rice flour, 40g of sugar, 75ml of water and 1-3 tablespoons of matcha powder.
- Mix until the mixture becomes homogeneous and the pieces of rice flour are broken.
- Cover the bowl with plastic film and put it in the microwave for 2 minutes.
- Carefully mix the mixture (which will be hot) and return to the microwave for another 1 minute.
- Move again and reserve.
Add the green layer to a bowl:
- Fold a square 8x8 inch bowl with a little potato starch.
- Carefully spread the green layer over the bowl, using a bowl roll if necessary, until it gets uniform and covers the bottom of the bowl.
Prepare the white and pink layer:
- Repeat the process of step 1 to prepare the white and pink layers.
- Add each layer over the previous one, starting with the white and then the pink.
Spray with potato starch:
- Spray a little potato starch over the upper layer of the mochi.
Cut the mochi:
- Let the mochi rest for 30 minutes.
