Method

Preparing the mass:

Start by combining in a bowl 1 egg, 1 tablespoon of sugar, 2 tablespoons of honey and 1 tablespoon of mirin. Bite well with a batcher until you get a homogeneous mixture. Then add half the milk and bite again, adding the rest of the milk then. Finally, squeeze the pancakes flour or 100g of common flour in the mixture, always mixing.

Cooking the pancakes:

Using a shell, pour about 1 tablespoon of the mixture into the pan, trying to do this from a height of 30 to 50 cm to get a uniform circle. Let cook until small bubbles form on the surface. To check if it is ready, raise one side of the pan with a spatula and check the color and texture of the bottom. It should be golden and with a beautiful honey color.
