Flower Sushi by Hina Matsuri

Prepare the sushi rice:

If you’ve never made sushi rice before, follow our Japanese rice recipe for sushi.To get the pink shade of sushi, use 125g of tempered rice with strawberries instead of sushi vinegar.

Cut the leaves of alga nori:

Carefully cut the nori alga leaf into four equal pieces. You will also need to cut a thin strip from another nori leaf to have five petals in total.

Model the petals:

With wet hands, put a nori strip on the sushi carpet and add a little junkyard on top. Place 25g of shrimp sushi rice in the center and wrap the nori sides, squeezing the rice to form a petal. Repeat this process with the other nori strips to get five petals.

Put the petals together:

Cut a carrot strip of the same size as nori to be the center of the flower. Carefully place the first petals in the middle of the sushi carpet, add two other petals on each side and then place the carrot in the middle. Add the remaining two petals, making sure all petals point to the center.

Add the leaves of spinach:

Unfold the sushi carpet and place 100g of spinach in the gaps between the petals, forming the leaves of the flower.

Add more Nori and rice.

Take a large sheet of nori and place it on the sushi carpet. Add 250g of sushi rice on top, leaving a margin of 2 cm on the top and bottom of nori. Place the set of petals in the middle of nori.

Wrap the final layer:

Carefully use the sushi carpet to wrap the nori around the flower shape until it reaches the edges without rice. Add the last 50g of rice and fold the nori tips. Press gently with the sushi carpet to seal and model the sushi roll so that it stays round.

Cut, serve and enjoy:

Cut the roll into pieces with the width of a thumb and serve.
